Next, unfold a thawed puff pastry sheet on a floured surface. Brush the pastry with the egg mixture, top it with the cheese mixture, as well as 10 ounces of thawed chopped spinach, and roll the pastry up. Cut the pastry into 20 slices and brush the pinwheels with more egg mixture before baking them for 15 minutes at 400 degrees. Cool for 10 minutes before serving.
