To ripen a banana, put it in a brown paper bag with an apple or tomato, and then let it sit overnight. Bananas should be stored at room temperature.
If a banana is ripening too fast, it can be placed in the refrigerator, where it will keep for several extra days. The peel will blacken, but the fruit inside will remain unchanged for a few days. However, if the banana is removed from the refrigerator, the ripening process will not resume. If bananas get too ripe, they can be used in recipes for desserts and breads. A mashed banana can substitute as a sweetener and a shortening substitute, in addition to providing a banana flavor and extra fiber.
