Paula Deen's prime rib recipe is one 5-pound standing rib roast and 1 tablespoon of her House Seasoning. House Seasoning consists of 1 cup of salt, 1/4 cup black pepper and 1/4 cup garlic powder. Remove the roast from the refrigerator, and let it sit out one hour or until it reaches room temperature. Rub the roast with the tablespoon of House Seasoning on all sides. Place the roast in a roasting pan, and cook it in the oven.
Heat the oven to 375 degrees Fahrenheit. Position a roasting rack inside a deep roasting pan, and place the seasoned roast on the rack rib side down and fat side up. Cook the roast for one hour.
After one hour, turn off the heat, but leave the oven door closed. Allow the roast to remain inside the oven, and wait for three hours. Do not open the oven door or remove the roast until you are ready to serve it. One hour before serving, reset the oven to 375 degrees Fahrenheit. Reheat the roast until it is hot all the way through and ready to serve.
The House Seasoning recipe yields 1 1/2 cups. Place the leftover portion in a storage container with a tight-fitting lid. The seasoning lasts for up to six months.
