Peel and thinly slice 10 cups worth of apples.
In a large bowl, combine the prepared apple slices, 1 tablespoon of the lemon zest, 1/4 cup lemon juice, 3/4 cups sugar and 1/2 cup golden raisins.
In a separate large bowl, cut the butter into the flour and then add in the remaining ingredients, including the remaining 2 tablespoons of lemon zest.
Wipe the interior of the Dutch oven with vegetable oil. Layer the bottom of the Dutch oven with the apple mixture and top with the topping mixture. Place the lid on the Dutch oven and place 8 coals under and 16 coals on top of the Dutch oven to reach 350 degrees F. Cook until the apples are cooked through and the topping mixture is brown.
