Pig Pickin' cake uses boxed cake mix, pudding mix and canned fruit. Paula Deen calls her version of Pig Pickin' cake "Is It Really Better Than Sex? Cake." This cake has a five-star rating on FoodNetwork.com.
To make Paula Deen's cake, prepare one box of yellow cake mix using the instructions on the box. Bake the cake in a greased 9-by-13-inch pan and bake for 30 to 35 minutes.
While the cake is baking, mix one 20-ounce can of crushed pineapple and 1 cup of sugar in a saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Boil for one minute and remove from the heat.
When the cake is done baking, leave it in the baking pan and poke all over with holes using a fork. Pour the pineapple mixture over the hot cake and set aside.
Make one box of vanilla pudding according to package directions. Spread the pudding evenly over the cake and refrigerate until thoroughly chilled.
Whip together 1.5 cups heavy cream and 1/3 cup sugar until stiff. Cover the top of the cake with the whipped cream, and sprinkle 1 cup of toasted coconut flakes on top of the whipped cream immediately before serving.
