Paula Deen does not offer any recipes for beef tips. However, another Food Network host does offer a beef tip recipe: Rachael Ray's recipe for Beef Tips with Mushroom, Sherry, Garlic and Butter-Almond-Citrus Rice.
To make Rachael Ray's beef tips recipe from her show "Rachael Ray's Open House," melt 2 tablespoons butter in a saucepan over medium heat. Toast 1/2 cup of slivered almonds for three to four minutes, add 2 cups white rice and the zest of 1 orange and 1 lemon, stir the rice to coat, and cook for one minute. Add 1 quart chicken stock, and bring to a boil. Reduce to a simmer, and cook, covered, for 18 minutes.
Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Once the oil ripples and begins to smoke, add beef tips, and cook for three minutes on each side or until brown. Remove the beef tips when cooked, set aside, and add 3 more tablespoons olive oil to the skillet. Heat the oil until it ripples, then add 1 1/2 pounds of halved cremini or white mushroom caps.
Cook the mushrooms for seven to eight minutes, adding garlic after five to six minutes. Season with salt and pepper, and cook for a few more minutes. Add 1/2 cup dry sherry, and reduce for one minute. Add 1 cup beef stock and the cooked beef tips to the pan, reduce heat, and cook three to four minutes. Remove from heat, and serve with the almond rice.
