Paula Deen offers a recipe for candied yams, called Ol' No. 7 Yams, named in reference to the bourbon it uses an ingredient. The recipe uses large sweet potatoes and calls for baking, slicing and candying the potatoes with a mix of sugar, butter, spices and bourbon.
The recipe calls for 4 large sweet potatoes, 1 long strip of orange peel, 1/3 cup of bourbon, 1/4 teaspoon of nutmeg and 1 stick of cinnamon. It also calls for 4 tablespoons of butter, 1 cup brown sugar and 3 cups of water. It serves four people and requires 10 minutes of preparation time and one hour and 45 minutes of cooking time.
The first step is to wash and dry the sweet potatoes, and then bake them for an hour at 400 degrees Fahrenheit. While the sweet potatoes are baking, mix the other ingredients in a saucepan, bringing the mixture to a boil before simmering until slightly thickened, which typically takes between 30 and 45 minutes. After the sweet potatoes bake, let them cool, remove the skins, and cut them into 1/2-inch thick slices. Place the slices in a medium casserole dish, and pour the syrup mixture over them. Bake them for about 30 minutes at 350 degrees F.
To save time, bake the sweet potatoes in advance.
