To oven-bake scrambled eggs, whisk together eggs, milk and seasonings into a bowl, then pour into a buttered baking pan. Place the eggs in a preheated oven and stir after about eight minutes. Continue cooking the eggs for another eight to 10 minutes, stirring occasionally until the eggs are fluffy.
Prepare a 9-by-13-inch baking pan by smearing the bottom and sides generously with butter. Preheat the oven to 350 F and place the pan in the oven to melt the butter while preparing the eggs. Break 12 eggs into a mixing bowl and add about 3/4 to 1 cup of milk. Whisk the ingredients together until well-combined. At this point you can stir in salt and pepper to taste, as well as any other seasonings you prefer, or other additions such as shredded cheese, diced ham, chopped spinach or diced bell peppers.
Pour the egg mixture into the prepared baking pan and place it in the oven. After eight minutes, use a plastic spatula to stir the eggs. Make sure to scrape the eggs from the edges bottom of the pan to allow for even cooking. Continue baking the eggs for another eight minutes, then stir again. Remove the eggs at this point if they look fluffy and done to your liking. Otherwise, continue cooking, stirring the eggs every few minutes until they're ready.
