Make the best carrot cake by mixing 2 cups of all-purpose flour, 2 teaspoons of baking soda, 1/2 teaspoon of salt and 2 teaspoons of ground cinnamon in a bowl. In a separate bowl, cream together 3 eggs and 2 cups of sugar, then stir in 3/4 cup of vegetable oil, 3/4 cup of buttermilk and 2 teaspoons of vanilla extract. Mix the flour mixture into the butter mixture, and fold in 2 cups of grated carrot, 1 8-ounce can of crushed and drained pineapple, 3 1/2 ounces of flaked coconut and 1 cup of chopped walnuts or pecans. Pour the batter into three greased round cake pans, and bake at 350 degrees Fahrenheit for 25 to 30 minutes.
While the cake bakes, make the buttermilk glaze by pouring 1 cup of sugar, 1 1/2 teaspoons of baking soda, 1/2 cup of buttermilk, 1/2 cup of butter and 1 tablespoon of light corn syrup in a saucepan and bringing it to a boil. After four minutes, remove it from the stove and stir in 1 teaspoon of vanilla. Whip together 3/4 cup of butter, 11 ounces of cream cheese, 3 cups of powdered sugar and 1 1/2 teaspoons of vanilla for the frosting. Layer the glaze between the cake layers, and top the cake with the frosting.
