The combination of oil and vinegar is considered to be a classic dressing for salad. There are numerous dressings that can be created with vinegar, oil and herbs and spices.
Many types of oil can be used for this type of dressing including olive oil, hazelnut, peanut and grapeseed oil. The oil should be added last when mixing the dressing.
Commonly used vinegars used in dressing include red wine vinegar, white wine vinegar, champagne vinegar and balsamic vinegar. Because of its immense flavor, balsamic vinegar should be used in small amounts.
Herbs and seasonings can be added for extra flavor. Ginger root, garlic, chili powder, dry mustard and grated onion all work well.
