To prepare Nick Stellino's Bacon, Onion and Gorgonzola Torte, preheat the oven to 375 degrees Fahrenheit. Roll pastry dough into a 12-inch circle, and place into an 11-inch tart pan with a removable bottom. Trim off excess dough, and poke with a fork. Bake for 15 to 18 minutes.
Cook olive oil and garlic, then add 2 onions sliced thin, 1/4 teaspoon of salt and 1/4 teaspoon of red pepper flakes, and cook until the onions are browned. On high heat, add 1/2 cup of white wine, and reduce. Add 1 cup of desired broth, and bring to a boil. Cook until the liquid has mostly evaporated, and then pour into a food processor and mix until creamy. Let the mixture cool.
Beat 4 egg yolks until thick, and then fold the creamed onions, 1 cup of diced and browned bacon and 1/2 cup of crumbled gorgonzola or blue cheese into the egg yolks. Pour into the pie crust, and bake at 375-degrees for up to 30 minutes. Let cool for 15 minutes, and serve warm.Learn more about Cooking
