To make a Lady Irish, which is a tart, sherry-spiked champagne cocktail, begin by filling a cocktail shaker with ice. Add 2/3 ounce of an Irish whiskey such as Bushmills, 2/3 ounce oloroso sherry, 1/2 ounce grenadine syrup, 1/3 ounce fresh lemon juice and 1 teaspoon simple syrup. Shake well, and strain into a chilled coupe glass. Top with 1 2/3 ounces chilled champagne and a small bunch of red currants as a garnish.
To make a 35-serving batch of New Year's champagne punch, place 2 quarts of fresh orange juice, a 2-liter bottle of ginger ale and 2 750-milliliter bottles of champagne in the fridge to chill. Place 1 quart of orange sherbet in the center of a large punch bowl. Pour the orange juice over the top of it, followed by the ginger ale. Add the champagne to the mixture, and stir well to create a foamy top.
