One popular main dish recipe from Patrick and Gina Neely is Spenser's sloppy Joes. A good dessert recipe of theirs is the refreshing frozen limeade pie.
To make Spenser's sloppy Joes, heat 1 tablespoon of vegetable oil in a large skillet. Add 1 chopped green bell pepper, 1 chopped red bell pepper and 2 chopped garlic cloves. Sauté the vegetables until they are tender, then add 2 pounds of ground beef to the pan, and cook until the meat is done. Add one 8-ounce can of tomato sauce, 3 tablespoons of tomato paste, 1 cup of barbecue sauce, 1 tablespoon of Worcestershire sauce and 1 teaspoon of hot sauce. Stir and simmer until the mixture has thickened, then serve it hot on buns.
To make frozen limeade pie, combine 2 cups of graham cracker crumbs, 1/4 cup of sugar and 7 tablespoons of melted butter in a bowl. Press this mixture firmly into the bottom of a 9-inch pie pan, and bake at 350 degrees Fahrenheit for 7 minutes, then set it aside to cool. In a medium bowl, gently fold one 14-ounce can of sweetened condensed milk into 12 ounces of whipped topping. Add one 6-ounce can of frozen limeade concentrate and 1 tablespoon of lime zest. Immediately spoon this mixture into the pie crust, and freeze it overnight. Garnish the pie with candied lime peels before serving.
