Sweet country mustard sauce, maple mustard sauce and pineapple mustard sauce are some mustard sauce recipes for ham. The sauces use ingredients such as Dijon mustard, maple syrup, apple cider vinegar and pineapple juice.
To make the sweet country mustard sauce, whisk 1/4 cup of packed golden brown sugar and 1 tablespoon of apple cider vinegar in a bowl until the sugar dissolves. Whisk in 1/2 cup of Dijon mustard and 1/4 cup of coarse-grained Dijon mustard, and season it with salt and pepper to taste. Cover it, and refrigerate it for at least one day before serving. To make the pineapple mustard sauce, combine 1 tablespoon of sugar and 2 1/4 cups of pineapple juice in a heavy saucepan, and gently boil it for 12 to 15 minutes while stirring occasionally. Transfer the mixture to a bowl and let it cool for five minutes. Whisk in 3/4 cup of Dijon mustard, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Pour 1/2 cup of the mixture into a bowl, and stir in 1 tablespoon of finely chopped thyme leaves. Reserve the rest of the sauce for serving.
