A pork loin for two people takes 20 to 40 minutes to roast in an oven set at 350 degrees Fahrenheit. A half a pork loin should be sufficient to serve two people, and it takes about 20 minutes per pound to roast at this temperature.

The Food Safety Inspection Service of the U.S. Department of Agriculture recommends that a pork loin be cooked until it reaches an internal temperature of 145 F; it can then be removed from the oven and allowed to rest for three minutes before serving. To make sure that the pork loin reaches a safe temperature, the USDA and the National Pork Board endorse the use of a digital cooking thermometer.
