Pasta is a traditional staple food in Italian cuisine. It is made from unleavened dough of durum wheat flour, cereals or grain mixed with water. Pasta can be divided into broad categories like short and long, or dried (pasta secca) and fresh (pasta fresca), with the latter using chicken eggs as a source of liquid instead of water. The most famous legend about the pasta states that it was brought back to Italy by Marco Polo from one of his travels to the Orient.
