To make a good Mojito, 4 lime wedges and 2 bar spoonfuls of caster sugar should be put in a glass and muddled together to release the lime juice. 12 fresh mint leaves should be bruised to release their aroma by putting them on one hand and clapping. The leaves should then be rubbed on the rim of the glass, and dropped in. They should be pushed down into the lime juice using a muddler.
Next, the glass should be half filled with crushed ice before pouring in 2 parts Bacardi Superior rum. The mixture should be stirred using a bar spoon until the sugar dissolves completely. The rest of the glass should then be topped up with crushed ice and a splash of soda water added to the mixture. Finally, the cocktail is garnished with a sprig of mint.
