Make moist applesauce fruitcake by mixing together 1 cup of chopped mixed candied fruit, 1 cup each of finely chopped pecans and walnuts, 1 cup of raisins, 1/2 cup of dried chopped apricots and 1/2 cup of dried chopped apples with 1 cup of all-purpose flour. In a separate bowl, cream together 1 cup of softened butter with 2 cups of sugar, then mix in 2 eggs, 2 cups of applesauce and 2 teaspoons of vanilla or rum extract. In another bowl, mix 2 teaspoons of baking soda, 2 teaspoons of ground cinnamon, 1 teaspoon of ground nutmeg, 1 teaspoon of ground cloves and 1 teaspoon of ground allspice into 1 1/2 cups of flour, and season with 1 teaspoon of salt. Stir the flour mixture into the butter and sugar mixture, then fold in the fruit mixture.
Pour the batter into a tube pan, and bake it at 325 degrees Fahrenheit for 60 to 65 minutes. Cool the cake for at least 10 minutes before turning it over on a wire rack to finish cooling.
