To microwave an egg, lightly coat the inside of an 8-ounce coffee mug with cooking spray and crack two eggs into the mug. Beat them with a fork and add salt and pepper to taste. Microwave for 45 seconds, scramble with a fork and microwave for another 45 seconds.
To prepare a poached egg in the microwave, pour 1/2 cup of water into an 8-ounce mug and crack an egg into the water. Place a saucer on top of the mug and microwave for one minute or until the yolk is runny. Remove the egg from the water and season it with salt and pepper. Serve on top of toast.
For an Italian-style variation of the traditional poached egg, substitute 1/2 cup of tomato sauce for the water. Microwave the egg for 50 seconds. Place 1 ounce of cubed, fresh mozzarella on top. Microwave for an additional 10 seconds or until the cheese melts. Remove the egg from the microwave and garnish with torn basil.
To make a cheddar cheese omelet in the microwave, spray the insides of two 8-ounce coffee mugs with cooking spray. Crack an egg into each cup, season with salt and pepper, and scramble with a fork. Microwave the eggs for 30 seconds and then flip them with a fork. Sprinkle one of the eggs with grated cheddar cheese and pour the other egg on top. Microwave for another 30 seconds.
