An easy tortilla soup recipe calls for combining 1 can of corn, black beans, chicken broth, chuck chicken and diced tomatoes with green chillies in a large pot. Simmer over medium heat until the chicken is thoroughly heated.
To make classic tortilla soup, char 4 garlic cloves, 4 large tomatoes, 1 small onion and 1 medium dried New Mexico chile. Remove the garlic peel and blend the ingredients along with 2 tortillas torn into pieces and 2 cups of chicken broth. Blend the mixture until smooth. Pour the blended ingredients into a large pot, and add in 4 more cups of chicken broth. Bring to boil and reduce heat. Continue to cook for 20 minutes.
Fry 6 corn tortilla strips, cut into strips, in a small amount of vegetable oil. Serve tortilla soup with tortilla strips, sliced avocado, sour cream, queso fresco, chopped cilantro and lime wedges.
