Mexican recipes that use shredded beef include Mexican Pot Roast Tacos and Kris' Amazing Shredded Mexican Beef. The main ingredients include bottom round roast or beef shoulder, onions, chiles and spices.
To make Mexican Pot Roast Tacos, rub salt and pepper to taste onto a 2-pound beef shoulder, and brown it along with 2 mashed garlic cloves in 2 tablespoons of extra-virgin olive oil at medium-high heat. Once the meat develops a crust on all sides, add 1 sliced onion, and saute it for four minutes. Mix in 1 28-ounce can of crushed tomatoes, 1 tablespoon of ancho chile powder, 1 tablespoon of cayenne pepper, 1 tablespoon of ground cumin and 3 bay leaves. Bring the ingredients to a boil, then simmer the meat on low for three hours.
Meanwhile, fry 6 medium corn tortillas in hot oil. Shred the cooled meat with a fork, and spoon the shredded meat onto the tortillas. Top the shredded meat with cabbage, cilantro and salsa.
Make Kris' Amazing Shredded Mexican Beef by adding 4 pounds of quartered beef bottom round roast seasoned with 2 teaspoons of ground black pepper to a slow cooker along with 1 7-ounce can of chopped green chiles, 1 7-ounce can of chipotle peppers in adobo sauce and 1 cube of beef bouillon.
