The Melting Pot recipes that you can make at home include cheddar cheese fondue, chocolate fondue and Coq au Vin fondue. To make cheddar cheese fondue, place 1/2 cup of light beer and 2 teaspoons each of chopped garlic, dry mustard and Worcestershire sauce into an electric fondue pot or a double boiler. Shred 6 ounces of medium-sharp cheddar and 2 ounces of Emmentaler Swiss cheese, and toss with 2 ounces of flour. Add cheese to pot and whisk thoroughly.
Ensure the beer mixture is warm before adding cheese. Add only one-third of the cheese at a time before whisking and adding more.
The chocolate variation of The Melting Pot fondue requires 8 ounces of milk chocolate in chip form, 2 tablespoons of heavy cream and 2 tablespoons of chunky peanut butter. Mix the chocolate and cream into the top bowl of a fondue set. If using a double broiler, the top pot must be standing on the simmering water in the bottom pot. Whisk or stir as the chocolate melts from the boiling water while adding peanut butter. Serve on low heat.
To make Coq au Vin fondue, heat 3 1/2 cups of vegetable stock in fondue pot. Add 1/2 cup of wine, 1/2 cup of sliced mushrooms, 1 tablespoon of minced garlic and 2 sliced green onions as the mixture begins to simmer. Add meat of choice to fondue mix via fondue fork. Ensure meat is properly cooked before serving.
