Make ground beef pasta shells by cooking 24 jumbo pasta shells. In a skillet, brown 1 pound of lean ground beef for five to seven minutes, drain and cool for five minutes. In a bowl, combine 1 jar of chunky tomato sauce with 1/4 cup of water, and pour 1 cup of this mixture into a glass baking dish. In another bowl, combine the cooked beef with 1 container of chive and onion cream cheese, 1 cup of Italian cheese blend and 1/2 cup of grated Parmesan cheese. Stir in 1 egg, and spoon the mixture into cooked shells.
Place the stuffed shells on top of the pasta sauce in the baking dish. Pour remaining pasta sauce over the shells, cover with aluminum foil and bake for 40 to 45 minutes at 350 degrees Fahrenheit. Sprinkle more cheese on top, and bake for another 10 minutes. Garnish with chopped fresh parsley.
Make chicken pasta shells by cooking 18 large pasta shells. In a bowl, combine 1 container of ricotta cheese, 1 slightly beaten large egg and 1/4 cup of grated Parmesan cheese. Drain 2 cups of frozen cut-leaf spinach, add it to the cheese mixture and then stir in 1 cup of chopped cooked chicken. Pour 1 cup of tomato sauce into a glass baking dish.
Fill shells with 2 tablespoons of the ricotta filling, and arrange them in the baking dish. Top shells with remaining pasta sauce, cover with foil and bake for 30 minutes at 350 degrees Fahrenheit. Top with 2 cups of shredded Italian cheese, and bake until cheese melts.
