One Weight Watchers meatloaf recipe uses 1 1/4 pounds of ground turkey instead of ground beef. Other ingredients needed are 1 tablespoon olive oil, 3/4 cup onions, 1/4 strip of chopped green pepper, 2 cloves chopped garlic, 1/4 cup low-fat shredded cheese, 1/4 cup seasoned breadcrumbs, 1 egg and spices.
Preheat the oven to 350 degrees Fahrenheit. Heat the olive oil over medium-high heat in a large non-stick skillet. Add the chopped onion, bell pepper and garlic, and sauté until just tender or about three minutes. Take the pan off the heat and let cool.
In a large bowl, combine the onion and pepper mixture, cheese, breadcrumbs, egg, 1 teaspoon of Italian seasoning, salt and pepper. Crumble the turkey over the bowl, and stir until just mixed. Coat a 8-by-4-inch loaf pan with cooking spray, and then lightly pack the meatloaf mixture into it. Bake for 35 minutes.
While the meatloaf cooks, make the topping. You need 1/2 cup ketchup, 1 tablespoon light brown sugar and 1 teaspoon mustard. Mix the ingredients in a small bowl. After the 35 minutes, spread the ketchup mixture evenly over the meatloaf and bake for an additional five minutes.
Remove the meatloaf from the oven, and let stand for 10 minutes. Cut into 10 slices. This recipe serves approximately five people, and each serving consists of two slices.
