To make Paula Deen's old-fashioned meatloaf recipe, add 1 pound of ground beef, 1/2 cup each of chopped onion and chopped bell pepper, 1 egg, an 8-ounce can of diced tomatoes and 1/4 cup of quick-cooking oats into a large mixing bowl.
Season with 1 1/4 teaspoons of salt and 1/4 teaspoon of ground black pepper. Mix all of the ingredients together well, using your hands if necessary. When everything is well-combined, shape it into a loaf, and place in a baking dish or loaf pan. Preheat oven to 375 degrees Fahrenheit. In a separate bowl, whisk together 1/3 cup ketchup, 1 tablespoon of yellow mustard and 2 tablespoons of packed brown sugar. Spread the topping onto the meatloaf, cover with aluminum foil and bake for one hour. Let rest for a few minutes before slicing and serving.
Paula Deen also has a recipe called "Aunt Peggy's Meatloaf" which is similar, but calls for a 6-ounce can of tomato paste rather than 8 ounces of diced tomatoes. Another variation is that Aunt Peggy's Meat Loaf requires 1/2 cup of quick-cooking oats instead of 1/4 cup of oats. This recipe also uses 1 tablespoon of Dijon mustard rather than 1 tablespoon of regular yellow mustard for the topping.
