Marsala sauce is a somewhat thick sauce that features the flavor of Marsala wine. In addition to the wine, Marsala sauce also contains beef stock, onion, garlic and mushrooms.
The sauce is ideal for adding flavor to a variety of meat and/or vegetable dishes, and it goes particularly well with chicken, pork, asparagus and Brussels sprouts. Chicken Marsala uses a popular variation of the sauce. After browning flour-coated chicken cutlets in a skillet, the cook deglazes the pan with Marsala wine to get all of the rich bits up off of the bottom. Then the cook finishes making the sauce and returns the chicken to the pan to heat through.
