Betty Crocker provides an easy marinated chicken recipe that can be frozen ahead of time for quick meals. Simply pour 1 cup of soy sauce, 1 cup of packed brown sugar, 1/4 cup of red wine vinegar and 1 tablespoon of vegetable into a reseable freezer bag. Add 2 teaspoons of minced garlic and 2 teaspoons of grated ginger to the mixture. Mix everything until the sugar is dissolved, then add the chicken. Marinate the chicken, and cook right away, or place the bag in the freezer and freeze for a future meal.
Food & Wine offers a tasty Brazilian beer-marinated chicken recipe. Add 2 cups of dark lager or stout beer and 1/4 cup of vegetable oil to a flat dish. Chop up 1 medium onion, 1/2 green bell pepper, 4 garlic cloves and 1 inch of fresh ginger, and add them to the beer. Finish by seasoning the marinade with 1 tablespoon of sweet paprika, 1 teaspoon of kosher salt, 1 teaspoon of black pepper, 1/2 teaspoon of caraway seeds and 1/4 cup of Dijon mustard. Add the chicken, and cover with a lid or foil. Allow the meat to marinate for at least four hours, making sure to turn the chicken regularly.
