Some recipes featured on The Marilyn Denis Show are Greek roasted pork Ttnderloin and fresh cranberry Brie bites. The pork tenderloin is seasoned with fresh herbs and roasted with grapes, then served with a black-eyed pea salad. The cranberry Brie bites feature fresh cranberries cooked in a sauce made with orange juice, honey and cinnamon and placed in the middle of two puff pastry rounds along with Brie cheese.
To make the Greek roasted pork tenderloin, sprinkle salt and pepper and 1 tablespoon fresh oregano or marjoram over the pork tenderloin. Heat 1 tablespoon olive oil in a large skillet, then add the pork, and cook on all sides for two to three minutes per side. Add in 1/2 cup green seedless grapes, and place the pan in a oven at 375 degrees Fahrenheit. Cook the pork until the internal temperature reaches 160 degrees Fahrenheit.
For the black-eyed pea salad, combine a can of black-eyed peas, a minced garlic clove, 2 sliced green onions, 2 chopped celery stalks, a peeled and diced green apple, and a diced roasted red pepper. Top the salad with fresh chopped parsley, 1/4 cup extra virgin olive oil, and sea salt and pepper. After the pork has rested, slice it, and serve it alongside the salad and the roasted grapes.
