A pint of green tomato chow chow, sealed, can be safely stored in the refrigerator for up to two weeks. Chow chow is a spicy relish typically consisting of green tomatoes, cabbage and bell pepper. It a traditional Southern dish served with salty cold cuts and meats.
Chow chow is simple to make, because the chopped vegetables are simmered for only about 15 minutes in a brine. This liquid often contains clove, allspice, cinnamon and coriander. Cooks seal the vegetables and some of the brine in pint or quart containers.
When chow chow and mayonnaise combine, they create a tasty coleslaw dressing. Drained chow chow and mayonnaise make excellent tartar sauce.
