To make yeast-free bread, mix 3 cups of unsifted whole wheat flour, 4 teaspoons of baking powder and 1 teaspoon of salt. In a separate container, mix 1 1/2 cups of rice milk and 1/4 cup of milk-free margarine, olive oil or vegetable oil. For a different flavor, replace the rice milk with 1 1/2 cups of water or any other liquid.
Add the liquid mix to the dry mix until all the ingredients fully integrate and there are no lumps. Make sure the dough is moist but not sticky. If the dough doesn't have the right consistency, add water or flour as needed to achieve the moist texture. Shape the dough into a ball or an oval, and score with an X-shaped or diamond-shaped cut on the top. Put the dough on a baking sheet, and bake for 40 minutes at 400 degrees Fahrenheit.
To make a focaccia-style bread, rub the dough with olive oil, sea salt and oregano before baking. Replace the rice milk with tomato juice, and add sun-dried tomatoes for a savory flavor. To make teatime bread, add 1 teaspoon of pure cane sugar or replace the rice milk with any fruit juice, and add chopped dried fruit to the dough.
