Tuna Fish Cakes
When no one has gone shopping in a while, raid the pantry and make up some tasty tuna cakes. These cakes whip up in under half an hour.

Place a frying pan over medium heat with olive oil in it to warm up. Meanwhile, mix together the tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice and the chopped jalapeno.
Scoop up 1/3 cup of the tuna mixture. Press between the palms to flatten into a patty. This recipe should make about eight tuna patties.
Place two or three cakes at a time into the hot frying pan. Cook for 2 minutes and flip the cakes over to cook an additional 2 minutes. Remove from the pan and serve warm. The tuna patties may be served with a side of fresh salsa, according to Martha Stewart.
