Tuna Fish Cakes

When no one has gone shopping in a while, raid the pantry and make up some tasty tuna cakes. These cakes whip up in under half an hour.

Prep time: 10 minutes

Total time: 15 minutes

Ingredients:

  • 3 cans tuna
  • 1 large egg
  • 1/2 cup fresh cilantro
  • 1/3 cup dry breadcrumbs
  • 2 tablespoons light mayonnaise
  • 1 tablespoon lemon juice
  • 1 jalapeno
  • 1 tablespoon olive oil
  1. Mix the ingredients
  2. Place a frying pan over medium heat with olive oil in it to warm up. Meanwhile, mix together the tuna, egg, cilantro, breadcrumbs, mayonnaise, lemon juice and the chopped jalapeno.
