To make tofu scramble, cut up any garnishes you wish to include, such as onions and bell peppers, and then sauté them in a well-oiled frying pan. Once the garnishes soften, crumble in some extra-firm tofu, and cook the mixture, stirring frequently, until heated through. Add any seasonings you prefer for flavor, such as salt, pepper, turmeric, garlic powder and fresh herbs. Enjoy the tofu scramble as is or folded into a warm tortilla.
- Chop vegetable garnishes
Chop vegetables such as onions and bell peppers to enjoy with your tofu. You can also include celery and mushrooms.
- Sauté the vegetables
Coat a large frying pan with oil, and bring it to a medium-high heat on the stove. Add the vegetables, and sauté them, stirring frequently, until they are softened. Reduce the heat to medium.
- Drain and crumble the tofu
Drain water from a package of extra-firm tofu, and use a paper towel to remove as much excess moisture as possible. Crumble the block of tofu with your hands, fork or potato masher.
- Add tofu to the frying pan
Combine crumbled tofu with the vegetables in the frying pan. Add salt and pepper as well as any optional seasonings, such as garlic, turmeric and chili powder. Continue to cook, stirring often, until everything is heated through. Serve hot as is or with warm tortillas.
