A vinaigrette refers to a sauce or dressing made with oil and vinegar. It is easy to customize a vinaigrette according to taste, using extra ingredients such as herbs. Substitute olive oil for another oil such as soybean, canola or peanut oil, if desired. Similarly, try substituting balsamic vinegar with wine vinegar, lemon juice or sherry for a different flavor. For a Southeast Asian style vinaigrette, combine rice bran oil with white vinegar, lime juice and fresh herbs.
For a sweet vinaigrette with more citrus flavors, minced garlic and parsley in a food processor. Add olive oil, balsamic vinegar, orange juice, honey, dried thyme and dried basil. Blend the dressing in the food processor.
Other possible additions to vinaigrette include truffles, cherries and blue cheese.
