To make The Chic Site's sweet overnight pickles, combine 1 2/3 cups white-wine vinegar, 2/3 cup plus 2 tablespoons sugar and 1/2 teaspoon kosher salt, and use the mixture to cover 2 cups sliced cucumbers, 1/2 a thinly sliced red onion, 1 tablespoon whole peppercorns and 2 tablespoons torn dill sprigs. Cover the container, and allow to rest for eight hours in the refrigerator.
If needed or desired, substitute apple-cider vinegar for the white-wine vinegar, or divide the recipe into individual jars before putting them in the refrigerator. Store the pickles in the refrigerator in an airtight container for up to five days.
To make All Recipe's simpler pickles recipe, combine 1/2 cup white vinegar, 1/2 cup white sugar, 1/2 teaspoon salt and 1/4 teaspoon celery seeds. Add 2 cups sliced cucumbers and 1/4 cup sliced sweet onions. Cover the container, and refrigerate overnight for at least eight hours. Serve the sweet pickles cold.
Bread and butter pickles provide a hint of sweetness and can be made overnight. Combine 4 sliced cucumbers, 1 sliced sweet onion, 1 cup sugar, 1 cup brown sugar and 1/2 teaspoon mustard seeds. Add 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon celery seeds, 1/2 teaspoon turmeric and 1 1/2 cups apple cider vinegar. Cover the bowl, and refrigerate the mixture overnight. Store the pickles in mason jars in the refrigerator for up to one month.
