To make sugared spiced nuts, beat an egg white until frothy, and toss in sugar, spices and mixed nuts. Spread the mixture on a greased baking sheet, and bake until browned.
After preheating the oven to 300 degrees Fahrenheit, spray a layer of nonstick cooking spray onto a rimmed baking sheet. Use a small bowl to combine 3/4 cup sugar, 1 tablespoon salt, 2 teaspoons ground cinnamon, 1 tablespoon chili powder and 2 teaspoons cayenne pepper. Beat 1 egg white in a separate mixing bowl until frothy, and add 2 cups raw cashews, 2 cups raw almonds and the spice mixture. Toss to coat, and spread the nuts on the baking sheet, placing them in the preheated oven for 45 minutes or until browned. Stir the nuts once during baking.
Remove the sheet from the oven, and allow the nuts to cool before removing them, stirring occasionally to prevent sticking. Store the sugared spiced nuts in an airtight container for up to two days. For an easy flavor variation, replace the chili powder and cayenne pepper with ground cloves, allspice and nutmeg. You can also use pumpkin pie spice and a touch of vanilla. If desired, replace the raw cashews with halved pecans.
