To make a special binbingka, begin by gathering the following ingredients: 2 cups of rice flour, 2 teaspoons of baking powder, 1/2 cup of grated coconut, 2 tablespoons of sugar and 2 teaspoons of salt. Also gather 3 eggs, 1 cup of sugar, 1 cup of coconut milk, 2 tablespoons of melted butter and 1/4 cup of grated cheddar cheese.
Preheat the oven to 350 degrees Fahrenheit, and gather two baking pans. Grease the interiors, and line them with banana leaves or wax paper. In a mixing bowl, sift the flour, salt and baking powder together before setting aside and getting another bowl. In this bowl, beat the eggs together until they are creamy and light, and then slowly add 1/4 cup of sugar at a time, beating well after every inclusion.
Add the flour mixture, and alternate with coconut milk, beating thoroughly to blend after. Once all of the ingredients are together, pour the mixture into the lined pans, and bake for 15 minutes. While the cakes are still hot, sprinkle the top with sharp cheddar cheese, and return the cake to the oven to bake for another 10 minutes. Once done, brush the top with butter, and sprinkle with sugar and grated coconut.
