Southern chicken and dumplings is prepared in several stages. The chicken, vegetables and seasoning are boiled in water and the dumplings are prepared separately before dropping them into the finished chicken mixture.
Preparing the chicken requires a large pot. Combine 1 chicken, 3 chopped celery sticks, 1 large chopped onion, two bay leaves and two chicken bouillon cubes. Add 1 cup of salt, 1/4 cup of black pepper and 1/4 cup of garlic powder. Add 4 quarts of water.
Simmer the pot over medium heat for approximately 40 minutes. Remove the chicken from the pot and allow it to cool. Shred the chicken into pieces after removing the skin. Return the meat of the chicken into the pot. Add 1 can of cream of celery or cream of chicken soup to the pot and simmer it on low heat.
Prepare the dumplings by dusting flour onto a clean surface. Mix 2 cups of all-purpose flour and 1 teaspoon of salt. Gradually add 3/4 cups of ice water. Knead the dough until the ingredients are combined, and then place the dough on the dusting of flour. Roll out the dough and cut it into 1-inch pieces. Place the pieces in the simmering pot. Allow the dumplings to cook for approximately 3 to 4 minutes.
