To make soup in a Vitamix, combine the ingredients in the blender container and secure the lid. Select Variable 1, then turn the machine on and slowly increase the speed to 10. After reaching 10, set the machine to high and allow it to blend until the container steams.
To make acorn squash soup in a Vitamix, cook, peel and seed 1/2 an acorn squash. Combine this with 2 cups of chicken broth, 1/2 cup low fat evaporated milk, 1 teaspoon of maple syrup, a pinch of nutmeg and 1/4 teaspoon of ground cinnamon. Season the mixture with salt and pepper to taste. Blend the mixture, slowly increasing the speed to high. When heavy steam leaves the container lid, turn off the machine and serve the soup.
For black bean soup in a Vitamix, combine 3 cups of low sodium vegetable broth, 1 cup each of black beans and garbanzo beans, 1/2 cup of sauteed onion, 3 cloves of roasted garlic and 3 tablespoons of lime juice. Add 1 seeded jalapeno pepper, 1 teaspoon of ground cumin, 1/4 teaspoon of Kosher salt and 1/8 teaspoon of black pepper. Blend the mixture until heavy steam comes from the container lid. Slow the machine to Variable 4. Insert 1/2 cup each of black beans and garbanzos, plus 1/4 cup of chopped red pepper and 1/4 cup of chopped yellow pepper. Blend for 10 seconds more, then serve the soup immediately.
