Make soul food macaroni and cheese by combining cooked macaroni with a processed cheese sauce and baking the mixture with a generous layer of cheese on top. Soul food macaroni and cheese is often distinguished from other versions by the inclusion of processed cheese food, spices and eggs.
To make 12 servings, butter or spray an 8-quart baking dish, and preheat the oven to 375 degrees Fahrenheit. Cook 2 pounds of macaroni, and set aside. To prepare the sauce, heat 2 cups milk in a large saucepan. Add 1/2 cup sour cream if desired. Also, add 2 pounds of chopped processed cheese food. Shred 1 pound each of sharp cheddar and Monterey Jack cheese, and set aside.
Simmer the mixture until all of the cheeses melt. Crack 4 large eggs into a bowl, and beat with a whisk. Whisk a few spoonfuls of the hot cheese sauce into the beaten eggs. Once tempered, pour the egg mixture into the rest of the cheese sauce.
Place half of the cooked macaroni into the prepared baking dish, and sprinkle with salt or seasoning salt, pepper, and Cajun seasoning to taste. Pour half of the cheese sauce over the macaroni, and sprinkle with 1/2 pound each of the shredded cheeses. Repeat this step with the remaining ingredients, and bake the casserole for 30 to 35 minutes, or until it is bubbly and golden brown.
