Making smoked eel takes several hours. In order to smoke an eel, you need an eel, salt, gloves, kitchen knives, a plastic bag, a plastic tub, brown sugar, a towel and a kitchen smoker.
- Place the eel in a bag with salt
Put on your gloves, and place the eel inside the plastic bag. Grab enough salt to coat the exterior of the eel, placing it inside the bag as well. Seal the bag, and then shake it vigorously until the entire eel is covered. Let the bag sit for at least two hours.
- Clean and gut the eel
Use your knives to scrape the slime and excess salt off the eel after removing it from the bag. Insert your knife into the eel and gut it from its anus to its jaw. Wash the eel thoroughly.
- Rinse the eel in a salt solution
Take out your plastic tub, and pour in about 2 gallons of water. Mix this with approximately 2 pounds of salt, and place the eel in the mixture. Let it sit for 10 minutes, and then dry it off with a towel. Let it sit for a couple more hours until it has dried all the way through.
- Smoke the eel
Cover the dried eel in brown sugar, and hang it up in your smoker. Use a low-temperature setting for about 90 minutes.
