A sisig kapampangan recipe calls for a pound of pig ears, 1 1/2 pounds of pork belly, 1 large minced onion, 3 tablespoons of soy sauce and 1/4 teaspoon of black pepper. To make, pour the water into a pan and bring it to a boil with the salt and pepper. Put in the pork belly and pig's ears and simmer for 45 minutes until the ingredients are tender. Remove the ingredients and drain the excess water. Grill the pig ears and belly until they are browned and done, and then chop the ears and belly into fine pieces.
In a large pan, melt the butter, and add the onions, cooking until soft. Add in the ginger, and cook for 2 minutes before adding the chicken liver, crushing it as it cooks in the pan. Add the pork belly and pig ears and cook for 10 minutes before adding in the soy sauce, chili flakes and garlic powder. Mix in the mayonnaise, and mix well with the other ingredients before topping with green onions and a raw egg.
