To make a simple venison marinade, combine 1/2 cup peanut or olive oil, 1/4 cup soy sauce, 1/4 cup teriyaki sauce, 2 tablespoons Worcestershire sauce and 1/4 cup sherry or rice wine. Blend the liquids. Crush 1 garlic clove and add to the liquid. Marinate the meat overnight.
For a different flavor, add a few slices of fresh ginger to the marinade. Mix 1 tablespoon baking soda and 1 quart of water and add to the marinating venison. This may help reduce the odor of the venison.
Another way to make a simple venison marinade is place 1/4 cup vinegar, 3/4 cup olive oil, 1 teaspoon mustard, 1 minced garlic clove and 1 tablespoon Italian seasoning or oregano in a large Mason jar and shake well. Alternately, whisk all these ingredients in a medium-sized bowl. Different vinegars impart a slightly different flavor. Try red wine, white wine or apple cider as options.
A simple barbecue-style marinade involves cooking 1/2 grated onion in 4 tablespoons butter until soft. Add 1/2 cup yellow mustard, 1/2 cup brown sugar, 1/2 cup cider vinegar, 1 tablespoon dry mustard and 2 teaspoons cayenne powder. Simmer the mixture for 15 minutes, and then let it cool. Pour or brush over the meat.
