First, preheat the oven to 350 degrees Fahrenheit and grease a cookie sheet. In a medium-size bowl, stir together 2 cups of peanut butter and 2 cups of white sugar until smooth. Beat in 2 eggs, one at a time, then stir in 2 teaspoons of baking soda, a pinch of salt and a teaspoon of pure vanilla extract. Roll the dough into 1 inch balls and place them on the prepared cookie sheet, 2 inches apart. Press a criss-cross into the top of the cookies by using the back of a fork.
Bake the cookies in the preheated oven for 8 to 10 minutes. When they are done, allow them to cool on the cookie sheet for 5 minutes before transferring them to a wire rack to finish cooling completely.
Between the 30-minute prep time and a 10-minute bake time, the cookies are ready in 45 minutes. This recipe makes 3 dozen cookies.
