Cook Time: 10 min.
Ready In: 35 min.
- 1 3/4 cups old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 1 large egg
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 1/4 sticks softened unsalted butter
- 1/2 teaspoon vanilla extract
Step 1: Turn on the oven and preheat it to 370 degrees Fahrenheit, and then grease baking sheets. Mix the flour, baking soda, cinnamon and salt and stir to combine in a large bowl. In another large bowl, combine granulated sugar, light brown packed sugar and butter. Beat the mixtures together with an electric mixer until it builds a fluff and becomes light. Once it becomes fluffy and light, add the egg and vanilla and continue beating. Add the oats to the mixture to combine and stop beating.
Step 2: Scoop the mixture in heaping tablespoons and then drop onto the baking sheet. Give at least 2 inches of space between the dough mounds. Flatten the mounds using moistened fingers. Place the baking sheet either on the upper or lower third of the oven. Bake for about 12 minutes or until golden brown. Set on racks after baking to cool. Serves 24 oatmeal cookies.
