Make a simple cherry cheesecake by making a basic graham cracker crust, then spooning the batter made from cream cheese, heavy cream and sugar over the crust. Some simple cheesecake recipes include both no-bake and bake varieties.
To make a quick, no-bake cheesecake, combine 1 1/4 cups of graham cracker crumbs with 2 tablespoons of sugar and 3/4 stick of softened unsalted butter. Press the crust into the bottom and partly up the sides of a springform pan. Cream together 10 ounces of cream cheese, 1/2 cup of powdered sugar, 1 teaspoon of vanilla extract and 1/2 teaspoon of lemon juice. In a separate bowl, lightly whip 1 cup of heavy cream, then fold the whipped cream into the cream cheese batter, and spoon over the cracker crust. Chill for at least three hours before serving with 1 jar of black cherry spread.
Make a simple baked cherry cheese cake by making a graham cracker crust from 1 1/2 cups of graham cracker crumbs, 1/4 cup of sugar and 1/3 cup of melted butter and pressing it into the bottom of a pie pan before chilling it. In a bowl, combine 2 packages of softened cream cheese, 1/2 cup of sugar, 1/2 teaspoon of vanilla and 2 eggs. Pour over the crust, and bake at 325 degrees Fahrenheit for 40 minutes. Chill for three hours before serving with cherry pie filling.
