In a small bowl, whisk together 2 large eggs with a pinch of kosher salt. Add 1 tablespoon of vegetable oil to a large skillet, and heat over medium-high heat. Add the beaten eggs, and cook for about a minute until they set. Flip the egg, and continue to cook for about 30 seconds until it is just set on the other side. Remove the egg pancake to a cutting board, and slice it into thin strips.

Mix 1 1/3 tablespoons of low-sodium soy sauce with 1 teaspoon of sesame oil and 1 tablespoon of water in a small bowl. Add 1 tablespoon of vegetable oil to the skillet, and set over high heat. Add 1/2 pound of peeled, de-veined and roughly cut medium shrimp to the skillet along with 1 tablespoon of peeled and minced ginger. Stir fry for about two minutes until the shrimp are almost fully cooked.

Add 4 ounces of fresh or thawed frozen snow peas that have been halved along with 1 cup of shredded carrots and 1 chopped bunch of scallions to the skillet. Continue to stir fry for another minute until crisp-tender. Add 3 cups of cooked white rice and the soy sauce mixture while continuing to stir-fry. Stir in the egg strip, and serve in bowls.
