Make shredded chicken tacos by simmering boneless chicken breasts in water until cooked. Shred the chicken using forks and then mix the chicken with various spices and sauces, such as cumin, chili powder and tomato sauce. Add the shredded chicken to warmed taco shells with toppings to taste.
For a simple shredded chicken recipe, simmer 1 pound of boneless chicken breast in water for 10 to 12 minutes. The water should cover all of the chicken in the saucepan. After it is cooked, drain the water and pull the chicken apart using two forks.
In a nonstick pan, cook one tablespoon of minced onions for approximately two to three minutes. Add the pulled chicken to the onion, and mix in 1 pinch of cumin, 1 pinch of chili powder and 1/4 cup of tomato sauce. Simmer the mixture for about three minutes and add to warmed taco shells. Good taco toppings include lettuce, tomatoes, peppers, shredded cheese, and salsa. This recipe makes three servings of taco filling.
Use different spices in your shredded chicken taco filling for different tastes. One more complicated recipe browns the chicken first before simmering it in a mixture of cumin, oregano, garlic, chili powder, tomato sauce and vinegar. This recipe then takes the chicken out of the sauce for shredding and adds it back into the sauce for final cooking.
