Make seven-layer salad by layering chopped lettuce, hard-boiled eggs, peas, bacon and cheese into a serving dish with mayonnaise and sliced onions. Another options is to load up on the vegetables and add radishes and celery.
To make this dish, start by spreading 3 cups of chopped lettuce into the bottom of a glass bowl or serving dish. Next, add six sliced hard-boiled eggs, 2 cups of peas, 8 ounces of crumbled cooked bacon and 2 cups of shredded cheddar cheese, making sure to season each layer with salt and pepper before adding the next layer. Mix 1 to 2 tablespoons of sugar into 1 cup of mayonnaise, and carefully spread it over the cheese. Chill overnight, and top the salad with 1/4 cup of sliced green onions and a dash of paprika.
Another option is to used mixed salad greens in place of lettuce. Top the salad greens with three sliced radishes, five sliced green onions, two sliced celery stalks and a 10-ounce package of thawed green peas. Finish with 12 slices of crumbled crisply cooked bacon and 1/2 cup of either Parmesan or cheddar cheese. Top with 1 1/2 cups of mayonnaise or your salad dressing of choice. You can replace the radishes with 1/2 cup of chopped green peppers.
