To make See's fudge, combine sugar and water in a heavy pot and bring to a rolling boil for eight minutes. In a separate bowl, cream the marshmallow and melted margarine and add the chocolate chips, nuts and vanilla. Chill in a refrigerator before cutting the fudge.
Ingredients for this recipe include 4 1/2 cups of sugar, 12 ounces of evaporated milk, 12 ounces of chocolate chips and 7 ounces of marshmallow cream. Additional ingredients are 2 cups of nuts, 1/2 pound of margarine and 1 teaspoon of vanilla. This recipe serves up to 25 people.
Mix all the sugar and evaporated milk into a large sauce pan and stir well to dissolve the sugar. Bring this mixture to a rolling boil for seven to eight minutes while stirring continuously. Pour marshmallow cream and melted margarine into a large bowl and cream until fluffy. Stir in the chocolate chips.
Pour the hot mixture into the bowl and stir until the chocolate chips melt. Add the vanilla and nuts. Blend well and pour into buttered pans. Allow the mixture to chill in the refrigerator. Cut the fudge into squares before it becomes firm. See's fudge is best served at room temperature.
