To make banana peppers stuffed with sausage, combine sausage with cheese, breadcrumbs, eggs, salt and pepper and then stuff the mixture into banana peppers. Serve the peppers atop marinara sauce with grated ricotta cheese.
To make the stuffing for banana peppers with sausage, mix 1 pound of roasted and finely chopped hot ground Italian sausage with 1/2 cup of bread crumbs, 1/2 cup of Locatelli Romano cheese, and salt and pepper to taste. Add additional cheese or bread crumbs until the filling has the desired consistency and moisture. Make a slice around the tops of four Hungarian hot or mild banana peppers, leaving enough of the pepper intact to leave the tops attached. Remove the seeds or leave them in the peppers as desired.
Carefully stuff the banana peppers with the sausage mixture, and heat enough olive oil in a pan to saute the stuffed peppers. Fry each side of the peppers until browned, and heat 1 cup of homemade or store-bought marinara sauce. Spread the warm sauce across a plate or service platter, and arrange the stuffed peppers on top of the sauce. Grate a wedge of dry ricotta cheese on top of the stuffed peppers prior to serving.
